Not sure what all the hype is about raw milk? First and foremost for most of us is the vast difference in the taste and quality of the product. Milk you buy in the store is pasteurized, homogenized (to prevent the cream from rising to the top of the jug), and standardized (removal of the cream to make the fat content exactly the same, lower than that in raw milk). All of this, plus shipping, bottling, and storage takes considerable time, contributing to even more lost flavor and freshness. The fresh raw milk you buy at Clover Creek Cheese Cellar we milk from the cows every day, filter, and store in a cooled stainless steel tank for no more than 36 hours. We do not process the milk in any way before you take it home. We believe that this contributes to a superior product that is both better for you and better tasting.
Is it Safe?
Some people are concerned about the safety of raw milk because it is not pasteurized. Raw milk is a safe food. The certification process is very rigorous with strict standards overseen by our local Dairyside veterinarians and the Pennsylvania Department of Agriculture sanitarian. We are constantly monitored for cleanliness of equipment, health of the cows, and milk handling procedures. At Clover Creek Cheese Cellar we gladly meet and even exceed these standards, as we also drink our milk and want to make the best and safest product possible. Look at the numbers: our milk consistently has had too few bacteria per milliliter to count. We cannot sell raw milk if it has more than 10,000 bacteria/ml. Milk intended for pasteurization can be sold at 70,000 bacteria/ml. Isn’t it safer to start with clean pure, raw milk? How to Purchase
Since July 27th, 2010, we have a raw milk jugging system licensed by the Pennsylvania Department of Agriculture and the Pennsylvania Milk Marketing Board allowing us to sell our raw milk at farmers markets and stores. We will continue to have filled jugs in our refrigerator at the farm. We try to keep at least eight jugs in there at all times, but if you would like to pick up more, please let us know before coming. You may pick up these jugs at any time. The cost of our raw milk is $5.00/gallon; half gallons are $2.50 when picked up at the farm. The cost at market is $6.00/gallon and $3.00/half-gallon.
