Ingredients

  • 1 lb. (453g) frozen hash browns

  • 1 cup (4oz) Clover, shredded

  • 1 cup (4oz) Galen’s Good Old, shredded

  • 1 cup (4oz) Susquehanna, shredded

  • 1 cup (4oz) Wild Mushroom, shredded

  • 2 cups (300g) fully cooked ham

  • 7 eggs

  • 1 cup milk

  • 1/2 teaspoon salt

  • 1/2 teaspoon ground mustard

  • Optional: chopped vegetables such as bell peppers, onions, or spinach for added flavor and nutrition

Directions

  • Place hash browns in a single layer in a greased 13 in. x 9 in. deep baking dish.

    Sprinkle the ham and then cover with cheese.
  • In a bowl beat eggs, milk, salt, and mustard. Pour over the ham.

  • Cover and bake at 350° for 1 hour.

  • Uncover; bake 15 minutes longer or until edges are golden brown and a knife inserted near the center comes out clean.

Notes

  • If you don’t like mushrooms, feel free to substitute any other cheese. Do you like a little heat? Try Honduran Harvest.
  • If you don’t have ham, you can use bacon or sausage instead
  • Don’t have a big group to feed? Cut the recipe in half and use an 8 in. x 8 in. pan instead.
