Grass-based Beef

On any dairy farm there is always the dilemma about what to do with the male calves that are born, as only females can give milk. At Ojala Farm we have decided to take advantage of this opportunity and create a desirable product that is generally difficult to find. Some of the bull calves are raised on pasture with the other calves until they are around 1-½ years old and near 1000 pounds. Dairy breeds, especially those that are raised on grass for beef are much lower in intramuscular fat than most beef breeds. Despite what you may have heard, this does not make the meat any less tender, less juicy, or less flavorful. In addition, animals raised on grass are higher in beneficial fats such as the Omega-3 fatty acids and Conjugated Linoleic Acid as well as Beta-Carotene and Vitamin E. Overall, grass-fed beef is a healthy and tasty alternative to grocery store or conventionally raised beef!

We sell our animals at the end of the grazing season, in September or October. They are sold by the whole, half, or quarter hanging weight at $2.00 per pound, as weighed by the butcher of your choosing. A hanging weight is the weight of the animal after the hide, head, feet, and viscera are removed. In ordering an animal from us, by state law you are contracting for us to provide a healthy animal to the butcher. At the same time you are contracting with the butcher to custom cut and package the beef as you desire, and you pay the butcher his going rates for that processing. We have been working with a local USDA inspected butcher in the past few years. We will deliver animals to that butcher for free. If you choose a different butcher you may need to pay mileage and make arrangements to get one whole animal processed by the same butcher.
